Long story, but I’ll try to keep it short. My wife has a pretty brilliant, artistic friend,. His brother is the head chef at Google. He is a brilliant jewelry maker, but also quite the chef himself
About seven years ago, he went into business in Algonac, With a conservative friend. They opened up a restaurant on the water, it served smoked foods. My Wife’s friend wanted to have decent bands at night there and had connections to some of the better ones in the Detroit area. His business partner, and him disagreed on what type of crowd to bring into the place. I asked him how do you decide which type of crowd you want in the place and how can you guarantee you get that type of crowd?
He said his business partner wants to charge two dollars for a Bud Light ( Using my favorite beer as an example). He wanted to charge $4.50.
Same Bottle of beer,. Different prices attract different people . You might have to push more volume, where on the other side, it’s less volume, but you make more money, and the price of food can be more expensive, even if it’s the same food
My daughter and I, once ate at a restaurant in Onekama, Michigan, where they charged us $40 for a bottle of Chloe Pinot Grigio. We both laughed because we would get that for $9.89 at Kroger’s.
It was a nice restaurant and we enjoyed our food.
