To be honest, I've never seen a gopher in the wild. Tons of chipmunks (similar, but smaller) Up North at the cottage but no gophers. Have seen plenty of woodchucks (similar, but larger) too.

What possessed the other UM to pick a burrowing rodent as a mascot?

When most people think of gophers they are thinking of pocket gophers which aren’t the same as woodchucks, but sometimes woodchucks are called gophers. As are groundhogs. They are all marmots.
