Here was my version today.
Jalapeno's cut in half length wise, and hollowed. Half of a cup of cream cheese, half cup of sharp cheddar and some scallions minced up. Mix it up and spread it in the jalapeno's carved out inside.
Of course you wrap in bacon. It said bake at 400 for 15. Mine took about 25 minutes for the bacon to get crispy.

Thanks Floyd. I always admired guys like WBH and Goose, and many others over the years who talked about smoking and baking and cooking and what not. Never really did much outside of grilling I guess, making risotto I guess, but that was it. I think it might have been WBH who just said, "Shit, you just have to do it". I figured what the fuck, and I have a wife that is pretty cool when I fuck up dinners. But I'd suggest to anybody just try shit. You'll fuck some shit up, but other things are pretty cool. From soups to crock pot shit to Prime ribs to this. I'm just trying shit.
I'm deep frying a prime rib next Saturday when the kid gets back from San diego. It will be complete with pictures. Even if I fuck it up.

Make some of that fudge up there - either the chocolate or peanut butter. Send it back to school with the daughter, she'll be popular. It really is good and easy to make....but people seem enormously impressed with it. It's so rich that you have to give 70-80% away.

Dwags, pretty much the same as me.
I did not put scallions in them, but I like the idea. And I didn’t put the halves together . I just wrapped each half with a half slice of bacon.

My wife wants me to do that with the halves next time. The recipe I was following called for that. When I try something for the first time I'll stick to the recipe as much as I can. Next time, I'll move on. Your's look great.

I didn’t have sharp cheddar, but I had a Mexican 4 cheese shredded mix and I used that this time. Otherwise same as Dwags.
And it does take 25 min or so for the bacon to cook.

The jalapeno plants are spent with a ton of fruit that I know not what to do with, so I tried this tonight. I actually put a little on some prime rib we made for this kiddos this past weekend and enjoyed it.
I just roasted the onion and peppers on a stovetop grill/griddle. 4 skewers (2 onion/2 pepper) produced a pint and a half. So far, so good.
