so we had nachos the other night.. I pre-cheesed the nachos.. threw on some black beans, some cilantro, some salsa.. then a bit more cheese.

Thanks! Good to be here. The cheese first approach also prevents the taco shell from getting soggy from the meat juice. Same concept as putting Mayo on the bottom bread of a sammy to keep the bread from getting soggy.

What kind of cheese do you guys use?
Also, any pointers on cooking the chicken for the tacos? I've been using the instantpot, a chicken breast, and I put a jar of salsa in there. It's quick and easy but I'm getting sick of it

I use thighs when I make chicken tacos. I cook em up in a frying pan with some water in there. I like to cook them until they start to pull apart easily, then pour off some of the water if necessary and add seasoning.
I like McCormick chicken taco seasoning, but I add my own spices to it as well. I also like a bit of lime juice and sriracha in there.

Thighs in a crockpot with some hot sauce and salsa. They will pull a little earlier and be a little more moist than titties. More fat.

That's pretty damn close to what I do. Been watching a few DIY Chipotle chicken videos. Going to give it a shot next time.

A light topping on the meat is sufficient for me. But as I said I’m weird. I don’t like cheese on my burgers, and overall; too much cheese makes me gag.

IIRC, you have asthma, right? Dairy in any form can exacerbate asthma by causing lungs to become phlegmy.

I used to drink a lot of milk, then learned about how dairy affects the lungs; switched to almond milk and cut back on cheese. Also stopped eating nut butters entirely, which have the same effect on the lungs as dairy.
