How do you grill your NY Stip?
Seasoning, no seasoning? Coals, gas? I'm looking for new ideas, so let's hear how you grill masters do it.

Charcoal. Sometimes with homemade Montreal seasoning that comes from the private stock of a guy I know. Sometimes nothing but some coarse black pepper.

Search for thread "Crazy steaks". I did some experimenting in there with really good results.

A gas grill won't get hot enough.
Coarse ground sea salt and black pepper. Maybe a little granulated garlic

1.5 to 2 inches thick minimum, seasoned with tons of med course salt and some pepper, bring up to room temperature on a covered plate, the I grill on the egg @ ~750 - 1000 for about 6 minutes per side, rest for 10 minutes while the smoker cools down a bit, then bake (return to the egg but using indirect heating at ~ 400-500) until 125 on the thermapen, then rest.
During the indirect stage, I season it with some fruit wood smoke.
