Brined today. Just pulled it out. Cooking for my parents side tomorrow. 21 lb. bird. Going to have to cook in my driveway and drive to Northville because my running lights on my trailer are out. I'm going to slather the breastesses in butter. Ice the titties before I put it on so the thighs and titties get done at the same time.

Used a new brine today starting with a gallon of unsalted vegetable stock instead of water. Cup and a half of kosher salt with maybe 3/4 cup of honey. A couple bay leaves, dried tarragon, whole black peppercorns, juiced lemons with the rind, granulated garlic, and a small hit of red chili flakes on the stove until it was hot. Put a 7# bag of ice in a 5 gallon pail and added the brine and turkey. Sitting in the fridge ready to go tomorrow.

Only worry is making gravy. Almost always fuck it up. Keep bottled stuff in the pantry just in case.

Now that I'm jealous of Pantry's Turkey, I feel the pathetic need to display my Smoked Turkey. It was extremely juicy and flavorful. No money shots though, I need to get a better knife before I do money shots on Turkey, so you'll just have to trust me. I also tried to smoke some of my Vietnamese wife's 4 cheese Mac and Cheese - this time she added Bacon. Mmmmmm. Bacon. The mac & cheese wasn't very photogenic coming out of the smoker as it had a very dark crust that had too much smoky flavor by itself. However, with the dark crust thoroughly mixed in - Heaven. Today was even better as the smoky flavor had a chance to permeate the mac & cheese in the fridge during the night. Mmmmm smoky flavor.
