Experiment: Smoking Bacon
If anyone has any advice/experience, please advise. I'm, going to go ahead with my original plean this afternoon anyway but I'd appreciate any help if any of you have done this before. I bought a couple pounds of pork belly that I've been curing for 10 days. Sliced it up, nice and thick, and today I'm going to attempt to "cold" smoke it on my grill. It won't actually be "cold", I plan on building some heat deflectors out of heavy duty foil and use only one burner on the lowest setting with wood chips in an aluminum container immediately above the heat source. Other than that, I'm shooting from the hip and just seeing what happens.

Isn't a grill going to be too hot for smoking bacon even with the heat deflecters? Most of the fat is going to cook off and you'll end up with jerky. Seems like you'd need something a lot cooler to smoke it in.

LMFAO, I actually still feel bad about that. I'm still trying to piece that all together but it had something to do with someone who played line vs. Mandarich and shit. Can't remember. Some ugly white dude wearing his own rosebowl jersey....

I used the gas grill so that I could use indirect heat, put up an aluminum foil heat shield, and smolder wood chips in it. worked like a charm. I was using my webber for ribs at high heat this evening.... Delish...... Couldn't put the bacon on there Brotatochip. The bacon was cold smoked, Brofessor.....

WBH turned me on to it. Ribs @ 320-ish + 1.5 hrs naked (smoke the fuck out of them) + 1.5 hrs wrapped = done.... fucking awesome....
