Like said, I buy the dough balls ($1.50-$2.00 depending on location)...not worth fucking around with. I usually bullshit them and say my wife wants to make dessert pizzas from some recipe she found.
Sauce can be anything from canned and accentuated or from scratch. Pizza sauce and spaghetti sauce are not that dissimilar. Don't have an actual recipe but tend to put more red chili flake in sauce for pizza than sauce for pasta, which gets more garlic.
Cheese. Again, no recipe. Mostly mozzarella but blend in some fontina and asiago.
Toppings: pepperoni, Italian sausage (cook it first), mushrooms (use a variety), onions, spinach, green pepper, etc.
Build on the peel starting with a dusting of flour and a fair amount of cornmeal to get it to release easier onto the pre-heated (450°) stones. Stones I have are 15" diameter. Load the pizzas to the hilt. Sauce on the bottom then a heavy layer of the cheese mix. Toppings then a lighter layer of cheese over the top.

thanks Pantry basically what I was aiming for, now I am following this NY style that I just prepped and I didn't know I was proofing for 24-72 hours. I'll post pics of pie on Monday or Tuesday night then, I am ordering some takeout I guess

Matty I've made it without proofing it. Make yourself 2-4 doughballs and just make one tonight. If you try to chill it you won't be able to stretch it thin enough.
Definitely watch the youtube link about how to stretch and form the dough. That's key. That and the stone/steel and broiler method. Use wax paper on your peel and transfer to the stone/steel that way if you don't have cornmeal.

Was sitting at a light today and noticed a unit in a local strip center that use to be a Cottage Inn Pizza place is now Toarmina's Pizza. Heard of it before. Looked it up when I got home.
~25 locations in Michigan and a couple in Mississippi.

Jets gets ordered in for lunch pizza most of the time at work but they sometimes switch it up and order Holiday, just a few miles away. Decent pizza but that place scares me.
2015 Christmas work luncheon was catered by Holiday/Chucks. Dead cockroach in the mostaccioli. Killed my urge to order anything from there ever since.

Had a cheese calzone that had ricotta and provolone inside with parmesan on the outside. That was in NC so I've been looking at anywhere that sells calzones nearby and any cheese ones pretty much just say "cheese" Going to make my own (seems simple enough) and see how it goes.

I used to live in Roseville and never tried Buscemi's. Walked in there once for beer and just got the vibe that it was an unexciting party store. Will have to try it if I'm out that way again. I was a big fan of Cloverleaf. Probably not as good as Buddys but up there. In Ferndale now and mostly get Jets, Howies or Hippies. I really like Hippies because of the options. Only place around that has veggie sausage that I'm aware of. That place is great but it's pricey and the people are very high. It's 100% a college town pizza place nestled in RO. Nick's is also good and I love the Uncle Andy's italian calzone.

Sorta funny. Met Eugene all those years ago and he developed a pizza empire.
